Yoghurt

Real, traditional Cypriot yoghurt is made of sheep and/or goat milk. Set in clay pots, it has a live culture and is fairly sour!

Once you have got past the initial tartness, you will find it is delicious, especially with Bourgouri (bulgur wheat pilaf), or for dipping village bread or Pita into as a starter or part of a meze meal.

You will almost certainly be served it in a clay pot at a taverna, and can also find it that way in shops, although more commercial dairy producers make yogurt from cow’s milk, or a mixture of cow, sheep and goat milk, and sell it in plastic tubs, which is equally delicious.
