Fresh, locally caught octopus is best served grilled, with lemon, parsley and olive oil, and is a specialty at fresh fish taverns, where it is skillfully cooked to perfection so that it becomes really tender before char-grilling. It often comes as part of a fish meze meal.

Another popular national dish is octopus casseroled in red wine with onions and spices.
