Swordfish Kebab


(Serves 4)

1 kg swordfish

2-3 small tomatoes, cut into sections

2-3 peppers, cut into cubes

2-3 onions, cut into cubes

2 bay leaves

Salt & pepper to season

½ cup olive oil

Juice of 2-3 lemons



Marinate the swordfish in olive oil, salt, pepper, bay leaves and lemon juice.

Thread the swordfish onto the skewers, adding tomato, onion and pepper between the pieces.

Cook on the grill and serve with olive oil and lemon dressing.
